OK so I was in the kitchen and I was trying to come up with another exciting meal for my family.  You know, one of those let’s find something in the kitchen kind of nights.  I was looking through the freezer and saw this bag of frozen Cauliflower Rice my husband picked up about a month ago.  I’ve thrown all kinds of things on top of this white bag, but there it was staring at me.

I quickly googled cauliflower rice and the first thing to pop up a stir fry recipe.  So I went searching for all the ingredients.  I did not have half of them!  Ok no problem, I’m a chef, right?  Yes, a Pastry Chef lol.  Let’s see how this turns out!  The recipe called for EVOO, all I had was some Olive Oil Spray to sautee my chopped onions and garlic and that would have to do.

Surprisingly this happened to work out well for me!  I was a sauteeing Queen, I tell ya!  My fancy recipe called for cauliflower rice, like you take stalks of fresh cauliflower and chop them up.  It even had a nice little video showing you how to chop it up all nice and pretty to resemble rice.  But come on who am I kidding, this is not a day I just had Cauliflower laying around.  I grabbed my frozen stuff, defrosted it a little and dumped it in.

I drained a can of peas and corn, added some salt, pepper, a tiny bit of soy sauce and some crock pot bbq chicken and TA-DA!  Cauliflower Stir-Fry that my family devoured lol.

Can I level with you?  I’m a little shocked they ate it.  But seriously it was delicious.  All it takes is a little effort and a whole lot of creativity to keep those bellies full.  Okay next time, I’ll do it the fancy way.

I was playing around in the kitchen and this just kind of happened to come from it. It was a nice filling meal for my family and you can adjust it as much as like by adding different veggies. Experiment all you want!
